Moroccan Carrot Salad




Ingredients:
  • Fresh Carrot (about 1/2 kg) (peeled and cut)
  • 4 tablespoons olive oil
  • 2 cloves garlic2 tablespoon lemon juice
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 2 tablespoon fresh cilantro
  • 1/4 tablespoon hot paprika
Preparation:

Boil the carrots in salted water until tender. In a medium skillet, gently saute the garlice cloves in the olive oil for 2-3 minutes over low heat. Discard the garlic, add the carrots, lemon juice, spices and cilantro. Saute over low heat for another 2 minutes and remove from the heat.
